Feasting on Epcot

Woke up today next to Her. She looked pretty as always. Getting out of bed when we're together is always very difficult. We finished off Take the Lead. She's happy anytime She watches the movie. She is watching it at the moment... again. She is obsessed with this Filipino actor named Dante Basco. He's the guy from Hook and the Surf Ninjas. She denies that She does not like Filipino guys but deep down inside, She love em! She's with me isn't She?

After the movie, we took a shower and got on the bus to Epcot. We have been to Epcot plenty of times and we still enjoy it every single time. I have some free snack coupons so we ate our hearts away! Some of the things that we devored were: almond pretzel, berry tart, strawberry shortcake, fries, chocolate cake and chocolate milk chug. Free food somehow always tastes better!

After the park, we went to the Grand Floridian. Apparently it is a very elegant resort and it was. Too elegant for my taste. I wouldn't stay there unless I'm getting married or something. It is a good resort though. She liked it. After our third snack @ the Floridian, we decided to head on home. The bus ride was great. She always takes the bus. I love Her "free-spiritedness"... Always very refreshing.

The day turned out good. Tomorrow, we plan to go to the Lowry Park Zoo @ Tampa. We'll see how it goes.

One more month...

She is everything I need that I never knew I wanted.

Month number 11 was not bad at all! Work was boring as usual! I have been dreading all day about what was gonna happen when I get out of work and meet Her. My mind had been boggling about what else I could do to make the day a little bit sweeter!

[She got the chocolates in the morning... She was really happy! What else?]

Never have I given anyone a corsage before. Nope! Didn't go to prom! Only that one Cinco de Mayo dance at the school gym when I was a junior in high school! That was half a decade ago. A corsage would be nice. It is a date. Well, since work was slow, I was able to get off early and drive to the flower shop and get Her the corsage. I guess everything went well cause I was able to pick Her up on time and She didn't see the flowers. Good job man!

I dropped Her off at the Her apartment and I went to mine. Man! I haven't spend any time up there at all for a while! Coming in from the from door, the bulletin board cleverly says,

"I didn't know we are having a contest on who can break the most [Venetian] blinds!"

Apparently later that day, Gean Karlos took the sign down out of frustration. He has been the one messing up the apartment. We had to replace the damn blinds twice already since we got here. After getting ready, I picked Her up two floors down and went off to the date. We were supposed to go to the Brown Derby and then watch the Fantasmic at MGM but we decided to go to Epcot France instead. It was a better plan. Plan B is always the better plan.

Guilliame was our server. He was the same guy we met the first time we ate there some months ago. Cool guy that one. She was very excited to have him. The creepy thin man server we had last time was a bore. Having anyone but him was exciting. The food was great as well as the company. I burnt my hair. The waiter dude was gonna take a picture of us and I got too close to the candle. Tssss! Oh well, I have to shave my head soon anyway.

The night was as perfect as it was gonna get. Off we went after dinner.

Back at the apartment, She got three new roomies. Their names are Sam, Marissa and Shantelle. Shantelle's friend Marsha was there as well. Cool people. It was getting late so to the bed we went.

It doesnt tickle my fancy as much...

...cause maybe I'm actually growing up? Ha! I hope so. Lately in my spare time, I have been wanting to play video games but I am starting to not feel like it anymore. I have to force myself to play the damn thing! I wonder what's going on... I hope I'm not getting sick or something. I remember the times when the cousins would play wrestling in N64 for hours at night! When the WWE was still WWF! I miss those times. What happened to the "gamer"? The last time I actually poured my heart out for a video game was Kingdom Hearts II. I guess that wasn't so long ago...

Keep your chin up boy! FFXII is coming out in a few months! You can play your heart away then!

Friday in Tampa

Judy and I went to Tampa FL to visit the Florida Aquarium. We were hoping that it is similar to the Aquarium of the Pacific in Long Beach... eh! It was pretty good. We ended up getting season passes because the benefits were pretty good. There's a bunch of discounts at other locations and going back there isn't half bad at all! They have real life penguins but we missed them. We will surely see them next time!!! Here are the pics:

Here I am @ the Museum of Science and Industry across the University of South Florida. It is actually a pretty good museum. They have a crapload of science experiments which is always cool and refreshing! What's even cooler is that I know most of the theories that go behid the experiments! What a geek! Here @ MOSI, they had the BODIES exhibition! However, we could not take any pictures at all! We got into the museum for free since we got the season pass for the Florida Aquarium. [See, I told you! Good benefits!!!] The Bodies exhibition was awesome! Judy was sufficiently grossed out but I liked it! I didn't learn much but it was interesting to see how our body part actually look like. For some reason, most of the dead models were black people though... I wonder why... There was this one asian guy though. It was funny!
Here, She bought me a snake cube puzzle thingy!!! I could not figure out how to put it together! I was stumped! However, shortly after getting home, I figured out how to put it back together! She's a cutie!

Thanks you Baby! I love spending time with you! Its always a pleasure to spend the entire day with you especially when we go to place unknown! I love sharing my expeditions with you! There's no one else I'd rather spend it with! Thanks!!!

There was a turtle crossing on our way to Animal Kingdom. I wanted to take it home but Judy wouldn't let me!

Big 2 Tourny

Here's the official Big 2 scoreboard! Judy and I are currently tied right now!! Hehe!

Kung Pao Spaghetti

This is my attempt to make CPK's Kung Pao Spaghetti. It actually tasted pretty good. It was actually pretty simple to make too.

Marinade:
1 tabespoon of soy sauce
1 tablespoonof cornstarch
1 tablespoon of chili oil
pinch of salt

1 [skinless boneless] chicken breast

Prepare the marinade w/ the chicken and place in the fridge for about 10-20 minutes.

Sauce:
3 tablespoons of soy sauce
3 tablespoons of vinegar
2 tablespoons of sugar
2 tablespoons of hoisin sauce
1 tablespoon of chili oil

Combine the sauce in a small bowl ans set it aside.

2 tablespoons of oil
1/2-inch ginger [diced]
1 tablespoon of minced garlic
1 green onion [chopped]
1 can of water chestnuts
1/4 cup of peanuts

Slurry:
2 tablespoons of chicken stock
1 teaspoon of cornstarch

In a wok, heat up the oil and saute the garlic and ginger. When the garlic is golden, throw in the chicken and saute for a few minutes until golden also. Add the sauce and bring to a boil. Add the water chestnuts and peanuts. Thicken w/ the slurry until glossy [add more water if the sauce becomes too mushy]. lastly, add the green onions and serve over spaghetti!!! Like such!!

Judy made Martha's soup once again. I didn't eat some this time but once again, comfort food is what was craved.

Another Friday in Florida. Great day so far. It was our last day of class and we are glad its over. Judy's grub this morning is donuts and coffee from Dunkin' Donuts.
